AKA I REALLY need to go grocery shopping and I’m winging it! My sales pitch for this evening’s scrumptious dinner is:
It’s like a fiesta in your mouth!
My sister suggested party hats and maracas to get the kids into it! I explained to them that it’s just like when we do our experiments!
Sophie asked if it was going to explode just like the volcano’s we made yesterday did… I had to be honest and tell her that was always a possibility. I think it might have boosted the appeal for her. SO with out any more hype here are the ingredients!
- 1/2 of a green pepper
- 1/2 of an onion
- 2 lbs ground turkey
- 1 packet fiesta taco mix
- 1 cup crushed tortilla chips
- handful of chopped olives (I used Kalamata)
- 1/2 cup chopped parsley
- salt and pepper
- 2 eggs
I mixed it all together balled them into patties and cooked them up in the skillet.
They were actually pretty good! The kids ate them AND my mother who HATES it when I get experimental in the kitchen actually liked them.
Since I didn’t have any hamburger buns I just used the Focaccia we had in the bread basket. **Perks of Ryan working at Panera, I get fancy bread**
They looked good, they tasted good and I had everything I need for them in the kitchen!
Since I still have another week until I can go grocery shopping the word “surprise” will be in the title of most dishes :D:D
