Any time I have a lot of people to feed I almost always make this Greek salad and people love it! It rarely make’s it to day 2 leftovers which is pretty awesome and it couldn’t be more simple! The Key to making this salad amazing is letting it sit for an hour or 2 before serving, you have to really let it meld all together and it is a perfect side for any meal, or by it’s self with some crunchy bread!
- 1 head of lettuce
- 1 cucumber
- 2 tomatoes
- 4 pepperoncini’s
- Hand full of olives ( which ever you prefer )
- 1/2 of an onion
- 4 ounces of crumbled Feta cheese
- 3/4 cup Italian dressing
Chop up all of your ingredients, I like to get my pepperoncini’s and onions very fine so no one get’s too much at once. Once your veggies are mixed together you add your dressing and then you’re Feta. Mix once again and put it in the fridge for an hour!
Now… I am constantly disappointed with the Italian dressing I get from the store so if you are in the same boat as me you can try this very simple Vinaigrette recipe!
- 1\2 cup Olive oil
- 1/4 cup apple cider vinegar
- 1 table spoon oregano
- 1 tea spoon garlic powder
- pinch of salt and pepper
- 1 tea spoon parsley
I like to save jars I get from the store because they are perfect for things like this! I get one of my empty jars, add all of the ingredients and shake! Shake it hard and your all done!
This salad is so tangy and delicious you will find it hard to stop eating! In the event I do have some left over the next day, a bowel of that salad with a nice chunk of baguette is the best!
